With his long beard and all white clothes, Gustavo Ibañez is easy to spot in a crowd (he’s often riding a white horse, too!). His coffee producing practices are a bit idiosyncratic as well. After the harvest, coffee cherries are typically held in tanks for a short period of time (called “fermentation”), but Gustavo puts his coffee through an unusually long 60 hour wet fermentation. The long fermentation combined with high elevation and ideal growing conditions result in a peach-like acidity, balanced out by notes of caramelized sugar.
This is our second year buying and roasting Gustavo’s coffee, and we’re so happy to share it with you again!
