The added INTENSO yeast boosts the expression of fresh and fruity characteristics, while respecting the unique flavors of Kibingo.
LALCAFÉ INTENSO™ yeast was designed specially for coffee production. Coffee cherries are placed in containers with the yeast and left to ferment for 36 hours. After fermentation, they are brought to drying tables to dry slowly for 2-3 weeks. During this time the cherries are sifted and sorted frequently to ensure an even drying and to remove any cherries with visual defects. Once dry, the coffee is bagged and taken to the warehouse, where Greenco’s expert cuppers assess each lot.
Since 2015, Greenco has contributed to the progress in the Kayanza and Ngozi coffee regions. Greenco contunies to increase the value of their farmers' coffee with new tools and techniques like the Intenso yeast used to process this coffee.
